In this sweltering heat , temperature hovering around 40 degree celcius in India , it had to be Lemon Rice.
Cool and giving comfort to the soul and also some respite from heat.
This is widely cooked in South India and prepared with a simple tempering of mustard seeds, curry leaves, red chilli . This type of rice can be had with veg and non-veg dishes according to your own liking I today had it with chicken 65 ( recipe will be posting soon) or else you can simply have it with some papadums and chutney.

- Prepared Basmati Rice 5 medium sized bowl
- Mustard Seeds
- Cumin Seeds
- Curry leaves
- lentils like urad dal and chana dal
- peanuts 3 to 4 teaspoon
- lemon (2)
- 3 to 4 red chillies
- 3 to 4 teaspoon of sundrop oil
- Salt to taste
Heat the oil in a wok, add all the tempering ( mustard seeds , cumin, curry leaves, urad dal , red chilli and peanuts . When it starts to splutter and starts giving out a distinct aroma add in the prepared rice. Adjust the seasoning .
At the end add Lemon juice . Mix in well. After adding the lemon put off the flame or otherwise it may turn bitter.
Plate it up and garnish with curry leaves.
