This is a simple chicken curry with Raw Mango Paste marination.
The preparation of this dish is same as any other ordinary indian chicken curry but the twist I have given here is that I have marinated the chicken with raw mango paste and opted out of yoghurt or tomato puree this time as our local market’s are flooded with these green beauties nowadays —
Star Ingredient :
- 500 gm of curry cut chicken
- 3 to 4 tablespoon of raw mango paste
- 2 large onion
- 6 garlic cloves roughly chopped
- 50g ginger, roughly chopped
- 4 tbsp vegetable oil
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 3 to 4 tablespoon of mango paste
- 1 teaspoon of red chilli powder
- 1 teaspoon of turmeric powder
- Salt and sugar according to taste
Roughly chop one onions and transfer it into a small food processor , add in the ginger and garlic and make it into a fine paste.
Make another paste of the sliced raw mango.
Marinate the chicken pieces with the onion, ginger , garlic and raw mango paste , salt and 1 teaspoon of vegetable oil for atleast an hour, the more the better.
Heat Oil in a wok , add in the remaining sliced onion, some sugar , (sugar is to give the chicken a red colour after it get caramalised) , Fry until the onions turn golden in colour and then add in the marinated chicken pieces, and saute for 15 minutes .
Now add in the dry spices (cumin, coriander , red chilli , salt and turmeric) and fry untill all the chicken pieces get’s a nice coating of all the spices. Saute the whole mixture on a medium heat till oil oozes out , then pour in a 4 to 5 cups of warm water and cover it with a lid , let it simmer for at least 45 min and take it from gas after the chicken gets properly cooked.
Now it is ready to be served with steamed rice with the addition of raw mango , this dish will be having a tangy taste —- 🙂
