This egg dish is popular in north and western indian, it is effectively a dry and spicy version of scrambled eggs .
It’s a super fast recipe with very few ingredients in hand, you can have a very comforting and no fuss meal , it can be had with rotis or parathas or even bread of your choice.

- 6 eggs
- 4 medium-sized onion
- 2 teaspoon sliced ginger and green chilli
- 2 sliced capsicum
- 2 medium-sized tomato
- 2 teaspoon of red chilli powder
- Salt to taste
- 4 Vegetable Oil
Beat all the eggs with some salt and pepper , keep aside.
Heat oil in a pan, add the sliced onion and fry them, add in the ginger and green chillies, add in the tomatoes and fry until they turn soft and oil oozes out.
Pour the eggs and scramble lightly. add red chilli powder, salt , and coriander leaves.
cook until it’s just cooked. Remove it from the gas and garnish it with coriander leaves.
Here I have used cucumber slices and stuffed it with anda bhurji to make a cucumber wrap ( sort of ) 🙂 You can garnish as you like it — run your imagination wild to make this simple dish extraordinary ——
