It’s totally a vegetarian dish , made of fresh cottage cheese and thick gravy of washed, blanched and pureed spinach leaves.
This is a very popular dish in India and have many versions , now this is my version of this dish.
Star Ingredient :
- 250 gm of paneer
- 1 bunch of green spinach leaves
- 3 to 4 green chillies
- 3 to 4 garlic cloves (roughly chopped)
- 1/2 inch ginger (thin slices)
- 1 medium-sized onion (finely chopped )
- 1 medium-sized tomato
- 1 tsp of cumin seeds
- 3 cups of water for blanching spinach
- 3 cups of cold water for ice bath
Blanch the spinach leaves and then put it in a large bowl with ice-cold water ( this helps retaining its original green colour) . When cooled , blend it in a grinder together with 2 green chillies . Keep it aside.
Fry the paneer cubes and keep it in a small bowl.
Now put some vegetable oil in a thick bottomed pan , and add the cumin seeds when the oil is hot. When the seeds stop spluttering add in the onions, and fry till translucent, then add in the ginger and the garlic , saute it for 10 minutes, then add in the pureed spinach leaves. Put the flame on a low heat , and fry the gravy , in between add the tomatoes , when the gravy has half reduced its original thickness , add in the salt , green chillies , and paneer cubes. Saute for a while then add in kasoori methi for some additional taste.
Take out in a serving bowl and garnish it with some fresh cream. 🙂
