Chicken in Orange Juice —– :)

Had 500 gms of boneless chicken in my freezer — and it was  friday night — I had to make something special —- but it should be light on stomach also — (courtesy my spouse’s  stomach upset) —

Was bored of making chilli chicken (one of son’s favourite dish ) — so vigorously went through  net — and got hold of this interesting recipe —-

Orange Chicken —    Was a bit aprehensive  at first — will it suit our taste bud ? — since it will be a sweetish dish  — but oh my god — it turned out so well —-   and am thinking of  serving it to my guests also —next time — and above all it’s to easy to make —

all you need is some boneless chicken and some oranges —

Main Ingredients :

  • 500 gms of boneless chicken cut in medium sized cubes
  • 2 ripe oranges
  • 200 ml of  canned orange juice
  • 1 juice of lemon
  • 2 tsp of  minced ginger and garlic
  • 2tsp of soya sauce
  • 5 tsp of apple vinegar
  • some orange rind
  • 1tsp of black pepper
  • 1 tsp of red chilli flakes
  • 1/2 cup of sugar
  • 1 egg
  • Required amount of cornflour
  • 1 tbsp of vegetable oil

Method :

Marinate the chicken cubes in 2 tbsp of orange juice , 1 tsp of soya sauce, apple vinegegar, minced  ginger and garlic , some salt  and keep it aside for 1 hour or so.

Then in a small bowl mix in some cornflour, egg , black pepper and salt . Coat the chicken pieces with this dry flour , heat oil in a non- stick pan and fry them in batches  .

Put some oil in the same pan you used for frying the chicken, you can also use the leftover oil ,add in the remaining minced ginger and garlic , then add the orange juice , apple vinegar , together with all the ingredients .  When the mixture comes to boil  add in the chicken pieces and simmer for sometime —

Dissolve cornflour in half a cup of water and mix in with the chicken pieces .
Put off the flame  and serve it with egg or veg fried rice —-
