It’s a mouth-watering dish which is perfect to serve at any occasion.
It is a West Bengal cuisine which is very popular among Bengalis.
This recipe follows the perfect art of cooking that gives an amazing texture which differentiates it from other dishes.
Main Ingredients:
- 2 Ridge gourd
- 2 medium-sized potatoes
- 50 gm of poppy seeds
- 1 tsp of kalonji seeds
- 1/2 tsp of turmeric
- 3 green chilli
- Mustard oil required quantity
- Salt to taste
Method:
Soak poppy seeds for at least 15 to 20 minutes in a cup of lukewarm water. Grind it into a fine paste.
Peel the skin of the ridge gourd alternatively. Cut it into lengthwise, and then chop them into small cubes.
Peel the potatoes and chop them into similar sizes like ridge gourd
Heat mustard oil in a deep bottomed frying pan and add in the kalonji seeds, and wait till it releases its aroma. Add in the cubed potatoes , fry them till the edges starts to brown, now add in the ridge gourd, turmeric and pinch of salt.
Toss for a few minutes, till the ridge gourd starts to wilt . Add the poppy-seed paste at this point of time , saute it for a few minutes, lower the flame and cover it and cook it till the raw smell has gone and all the spices and the vegetables get well incorporated.
Turn off the flame . you can add in few drops of raw mustard oil on top for some additional flavour, which we do in our household.
