Since it is winter time , capsicum or green bell peppers are in abundant and a perfect time to make capsicum sabji that goes well with roti —
This is a simple recipe which can be served as a side dish — a handful of common spices will further enhance the flavour —
- 4 capsicum
- 3 tbsp of besan or gram flour
- 1/4 tsp of fennel seeds
- 1/4 tsp of cumin seeds
- 1/3 tsp of coriander powder
- 1/2 tsp of mango powder
- 1/3 tsp of turmeric powder
- 1 tsp of red chilli powder
- Salt to taste
- 3 tbsp of vegetable oil
Cut the capsicum in small bite sized pieces.
Roast besan on a small non-stick pan for 3 to 4 minutes on low flame , keep stirring so that it does not stick to the bottom of the pan. keep it aside.
Heat oil on another medium-sized pan , temper it with fennel and cumin seeds .
Add capsicum and fry on medium flame for a minute, add all the dry masala like turmeric, red chilli powder , cumin, coriander powder, dry mango powder and salt .
Fry the vegetable on an open pan don’t cover it —
Now add besan while keeping the gas flame low , mix it well with capsicum till it gets a layer of besan on top of it —
Cook for another 2 minutes on medium flame and then on high flame for another one or two minutes to make it crispy–
