Carrot or Gajar Halwa

This is a carrot based dessert which is very popular in  India specially during winter season when we get a rich harvest of healthy carrots —

It is one of the classic Indian sweets that never fail to impress anyone—

Main Ingredients:

  • 500 gm of grated carrot
  • 2 cups of full fat milk
  • 1/2 cup of heaped sugar
  • 1/2 cup of khowa /mawa
  • Some chopped mixed nuts (pista, cashew, almonds)
  • 1 tsp of elaichi /cardamom powder

Method:

Heat Ghee on a non-stick pan  over medium flame—

Toast the nuts in the ghee and keep these aside to be mixed at a later stage—

Add in the grated carrot and fry for 6 to 7 minutes till the raw smell disappears—

Add in the khoya /mawa and cover it with a lid  for another 5 to 6 minutes —   it should be mixed at regular intervals —

Pour milk on to this roasted carrot mixture , stir it well and bring it to a boil—

Put it on low to medium flame — cook until  the milk is absorbed and the mixture starts to thicken — this will roughly take 15 minutes — stir occasionally in between to prevent it from sticking —

Add sugar , chopped and fried nut mix , mix well —  Stir well and cook till the sugar has dissolved — it will take 5 minutes —

At the end add cardamom powder , mix well and put off the flame —

Your delicious carrot halwa is ready to eat —
