Bengali Niramish Alur dum is a dum alu basically had during fasting or puja’s and is made without onion and garlic —
Trust me it tastes better than the other Amish version ( using onion and garlic) one —
This is perfect meal for any day or you serve it in special occasions — it goes best with poori , roti , paratha , karaisutir kachuri or pulao —
There are many versions of this simple alur dum and this is my version –with Hing or Aesofitida —-
Main Ingredients:
- 500 gm of potato
- 1 bay leaf
- 1/2 tsp of cumin seeds
- 2 tbsp of ginger paste
- 3 large tomato paste
- Coriander and cumin seeds paste
- 1 pinch of Hing
- 2 tsp of red chilli powder
- 1 tsp of garam masala powder
- Salt and sugar to taste
- 3 tbsp of vegetable oil
Method:
Peel and boil the potatoes in a pressure cooker — it needs hardly two whistles —
Cut it into medium-sized cubes — Fry them for a minute or so in a skillet –till it turns light brown in colour — be careful enough not to break them —
Put oil onto a pan and heat it up — once the oil is hot add bay leaf and the cumin seeds when it starts releasing it’s aroma add in the Hing — add the masala — except garam masala , salt and sugar —
Saute for 10 minutes adding water in between — when the masala starts leaving oil add in the fried potatoes, mix in well with the masalas , add in salt and sugar — Keep it cover with a lid and in dum for at least 15 minutes —
Open the lid after 15 minutes , sprinkle some garam masala — your yum alur dum is ready to be served —- 🙂
