Anda curry

This is a simple bengali egg curry that we usually make at home —

Simple , flavourful and delicious for your everyday meal —

This dish comes in handy when you are in no mood to cook vegetables and your fridge is void of any other meat that you can cook —-

It can be paired with jeera rice, roti or simple plain rice —
Main Ingredients:

  • 4 eggs
  • 2 medium-sized potato
  • 4 tsp of ginger garlic paste
  • 1 medium-sized sliced onion
  • 2 tsp of coriander powder
  • 2 tsp of cumin powder
  • 1 tsp of turmeric powder
  • 2 tsp of Kashmiri red chilli powder
  • Salt to taste
  • 2 tsp of garam masala powder
  • 1 tsp of whole garam masala powder
  • 4 tbsp of mustard oil

Method :

Hard boil and , de shell the eggs and keep it aside —

Put some salt and turmeric on the eggs and shallow fry —

Boil the potatoes and cut them into four pieces each —

Shallow fry the potatoes —-

Heat mustard oil in a kadai — temper it with whole garam masala — add in the sliced onion and fry them till they are golden brown in colour —

Add the ginger , garlic paste — saute for 10 minutes —

Now add all the dry masalas ( coriander , cumin, turmeric, red chilli powder ) and salt and saute it for further 15 minutes —

Add some warm water to the masala mixture — put in the egg and potatoes when the water comes to a boil — Cover it with a lid and put the gas on to medium flame —

Wait till the water is absorbed and it becomes a semi thick curry — Put off the gas flame —

Sprinkle some garam masala on top of the gravy — and it is ready to be served —-

    Looks so beautiful ! May I know the difference between the whole garam masala & garam masala powders?

    Thanks Megala — and about the difference — whole garam masala constitutes of whole spices of cardamom, clove and cinnamon whereas the Masala powder is the powdered version of the same spices — these whole spices are roasted and then grinded to a course powder form 😊
