Shrimp and Chicken Pad Thai Noodles

It is an easy to make, better tasting and healthier than the takeaways —

This is one of the dish that I would like to make every weekend if I am allowed to do so 😛

by my family — since it is super easy to make and so scrumptuous  with a sweet , sour and spicy flavours —

Main Ingredients:

  • 1 pack of Pad Thai Rice Noodles
  • 1/2 cup of shrimps
  • 1 cup of boiled and shredded chicken
  • 2 tbsp of fish sauce
  • 2 tbsp of siracha sauce
  • 1 tsp of soya sauce
  • 2 large sliced onion
  • 6 to 7 minced garlic cloves
  • Required quantity of vegetable oil
  • 1/2 cup of spring onion
  • 2 tsp of sliced lemon grass
  • Sugar and salt to taste
  • Roasted peanut, coriander leaves and sprouts for serving
  • 1/4 cup of lemon juice

Method:

Place the noodles in hot water for 5 minutes or until soft —  Drain the noodles in a strainer and toss it once or twice —

Mix the sauces — ( soya sauce, fish sauce and siracha sauce ) in a bowl—

In a large pan heat oil — add sliced onion and garlic –until lightly browned —

Add the shrimps at this point and stir fry until it turns pink in colour —

Add the shredded chicken , lemon grass, spring onion and stir fry for 5 minutes —

Now add the noodles and the sauce — toss all the ingredients together — mix well  so that the sauce gets evenly coated — adjust seasoning —

Transfer the noodles to a platter — top it with some spring onion, roasted peanuts  and serve it with some lemon wedges —-
