Kunafa

It’s a popular Arabic dessert — with either cream cheese filling or cream —

It happens that I always choose the easy ones —-

It has a cheesy inner with a crispy crust on top —

Traditionally it is made with extra thin noodles of semolina flour —

I couldn’t get hold of this — hence I made my version of kunafa with vermicelli — and I promise you this is not an inch lesser in taste —

So here is the recipe —
Main Ingredients:

  • 4 cups of roasted semolina
  • 6 tbsp of melted butter

For cream cheese filling:

  • 1 cup of milk
  • 7 tbsp of cream cheese
  • 2 tsp of maida
  • 2 tbsp of sugar

Sugar syrup:

  • 1/2 cups of water
  • 1 cup of sugar
  • Lemon juice (few drops)

Method:

Loosen the semolina with your hands and then gently mix the melted butter — mix evenly and keep it aside —
Prepare the cheesy layer —

Melt 1 tsp of butter in a pan –add flour — roast for 2 minuter or until the raw flavour disappears — add in the milk and stir continuously to avoid any lumps — reduce the flame and stir till it is reduced to a thick consistency —

Now add in sugar and the cream cheese slowly and mix it thoroughly — remember to switch off the flame after you have added the cheese— this mixture should be thick—
Prepare the sugar syrup:

Bring to boil sugar and water in a vessel — add some lemon juice — Stir well and cook on a medium flame over 10 to 15 minutes —
Assembling:

Divide the semolina into two half portions — place one half on the base of medium-sized pan ( the pan must be on low flame ) —

spread evenly and press gently — Cover it with a lid

Turn it over with the help of a plate on top of it — once in 5 minutes —

Alternatively you can bake it at 180 degree centigrade for 30 to 40 minutes —

Once the Kunafa is done — pour the sugar syrup immediately while it is still hot — let it cool for 5 to 10 minutes —

Using a knife loosen the side and flip it onto a plate —

Garnish it with some chopped pistachio
